Bruschetta with herring, pickled beets and lemon-caraway seeds dressing

Ingredients

Iceland Herring – 115 g
Pickled beets – 50 g
Green apple – 50 g
Cucumber – 50 g
Ciabatta – 5 slices
Cream cheese – 2 tbsp

For salad dressing

Caraway seeds – 0.25 tsp
Lemon – 0.5 pcs
Olive Oil – 20 g
Fresh parsley – 2 sprigs
Ground pepper, to taste
Greenery, for decoration

Cooking

  1. Toast bread on both sides until golden brown.
  2. Fry the caraway seeds in a dry frying pan, then crush it in a mortar. Mix caraway seeds with lemon juice, olive oil, minced parsley and pepper.
  3. Cut the pickled beets, apple and cucumber into thin slices and mix with lemon-caraway seeds dressing.
  4. Cover the bread slices with cream cheese and place the vegetable mix on them.
  5. Top the dish with herring, herbs and serve.
