Hot smoked pink salmon with baked vegetables

Ingredients

Hot smoked pink salmon with spices – 200 g
Zucchini – 0.5 pc
Bell pepper – 1 pc
Carrot – 1 pc
Fresh tomatoes – 2 pcs
Red onion – 1 pc
Fresh thyme – 2 sprigs
Olive oil – 20 g
Salt, pepper, to taste

For sauce

Fresh mint – 20 g
Fresh parsley – 20 g
Olive oil – 40 g
Lemon, (zest) – 0.5 pc
Lemon juice – 1 tbs
Garlic, to taste
Salt, pepper, to taste

Cooking

  1. Cut zucchini and tomatoes into slices (10 mm thick), peeled onion and carrot cut into slices (5 mm thick).
  2. Peel pepper and cut into slices. The size of the slices should be the same as the size of other vegetables. Season everything with salt, pepper, oil, thyme leaves and bake at 180 ° C for 30 minutes.
  3. Grind all the ingredients for the sauce with a blender until smooth. Add salt and pepper.
  4. Warm the pink salmon according to the instructions and serve with vegetables laid out next to it, add some mint sauce on top.
